1 egg
1/2 cup buttermilk
1 cup all-purpose flour
1-1/2 tsp. garlic powder
1-1/2 tsp. pepper
1/2 tsp salt
1/2 tsp. paprika
2 lbs chicken tenderloins ( I actually only use one chicken breast and I cut it in strips and that usually feeds us for a meal if I get fries too. However, if you have a larger family, you will need about 2 lbs, which is about 2 chicken breasts.)
Oil for Deep-fat Frying (I just use any oil I can find in a sauce pan heated up enough to fry evenly).
2 Tbsp. Grated Parmesan Cheese (Optional, I usually don't do that part)
In a shallow bowl, whisk egg and buttermilk. In a separate shallow bowl, combine the flour, garlic, powder, pepper, salt and paprika. Dip chicken in egg mixture the flour mixture.
In an electric skillet heat oil to 375 degrees. Fry chicken a few pieces at a time, for 2-3 minutes on each side or until no longer pink. Drain on paper towels and sprinkle with cheese.
Like I said, I usually just fry the chicken in oil on the stove in a sauce pan because I don't own a fryer.
